By default Jibri can record one session at a time. It needs to be scaled to support multiple recordings.

Jibri provides services for recording or streaming a Jitsi Meet conference. It works by launching a Chrome instance rendered in a virtual framebuffer and capturing and encoding the output with ffmpeg.
When using Jitsi on a public server, the recording is stored on to your dropbox account. Whereas for self hosted jitsi, the recording can be stored on your preferred location like Dropbox, google Drive, S3 bucket.
The easiest way to record is to live stream your conference to YouTube and access the recording there. You can try this now on meet.jit.si. Self-installed Jitsi Meet deployments will need to setup Jibri to do this.
One jibri at a times stores only 1 meeting recording. Based on this information, if you are looking to record multiple meetings, we suggest scale Jibri so that multiple meetings can be recorded simultaneously.
